This is a recipe which includes the green leafy vegetable cooked with rice so that the kids won’t fuss much to eat the leafy veggies.
Ingredients: Half a bunch of green leafy vegetables 2 small green chilies chopped 1 small onion chopped 1 cup coconut milk 1 cup rice 1 tbsp ginger garlic paste 2 tbsp oil Salt to taste
Method : Heat oil in a pot and when hot add the ginger garlic paste, fry till roasted. Next, add the onions and chilies and stir till tender. Then add the chopped leafy vegetables and stir for a minute. Now add the rice and stir for a while, add the coconut milk and additional water enough to cook the rice. Add salt and cook on low heat till the rice is cooked and all the liquid is absorbed. The coconut milk gives a good flavor to the rice and the bhaji is cooked along with the rice making a unique but delicious main dish for lunch or dinner. This can be served with either dhal or any other gravy.
the recipe is nice but instead of Bhaji Rice one calls it Pulav which is commonly known to all - young and old. Giving a new name makes it interesting but ultimately our aim is to make children take homecooked nutritious food - Carry on with such other experiments of giving new names to the old recipes
